Ready for ribs...

Start with the ribs....  ask for a St. Louis cut at Claiborne hill....

Then the rub... 

Brown Sugar
Sea Salt
Cayenne Pepper
Black Pepper
Spanish Paprika
Garlic Powder
Coriander
Fennel
(not in order of amount... I just added and tasted).... 
Rub and let set in the fridge till tomorrow...

Well, bon appetit!  Let us know tomorrow night how they turned out.  We have some in the freezer from Wal-Mart.  We'll cut some pecan tree twigs and grill away-maybe next weekend.  The stuff you added looks good-I leave all the  seasoning/preparing, and "bbqing" ribs to  to my hubby.  I do the inside work. lol

Sounds like pecan will be great smoke...   as long as you are not cutting fresh twigs.  They have to be dried or the smoke will leave an acrid taste on the meat.

I will let you know how they come out, or PM me with a phone number and you and hubby can stop over for a taste...

I don't know nothing about all that-ha!  All I know is the proof is in the puddin' and the ribs are always yummy. lol  I know that we used to soak mesquite and the ribs were always good.  I hope you aren't too cold standing outside a grillin'.  :)
