This is the best of the best for learning true barbecue.  I have a friend who has worked with Paul Kirk and he totally recommends this class.  I am going to attend.

Will post more information soon.   Contact Link Dantoni for more information.

It's a great class.  I took it years ago.  It literally took 5 years off my trial & error.... OK, mostly error.
I learned to make my own rubs using ingredients/spices that I love.
Previous to taking the class I was inconsistent.  I've always grilled & BBQed (smoke/slow cook) for large family, church & school groups.  Once I understood how to pick the meat, how to trim, how to season, what temps to use & time. etc the results were very consistent and predictable.

I have several of Chef Paul cook books.  I really like '500 barbeque dishes'.  The grilled bananas with his butterscotch sauce... Man! That's some good stuff!

By the way, those old enough to know of Julie Childs... Chef Paul was the BBQ Chef on her cook team.

Well worth it.  If I add the cost of all the tough meat I  have tried to serve...  easy worth $250.
I will be there.
